A healthy Spanish-recipe soup to banish the winter blues.

The ingredient of Chicken and picada soup

  1. 1 tablespoon olive oil
  2. 1 large onion, chopped finely
  3. 1 red capsicum, chopped finely
  4. 2 med potatoes, peeled and diced
  5. 400g chicken breast fillet, sliced
  6. 1L Campbells Real Soup Base - Spanish
  7. 1/4 cup blanched almonds
  8. 1 clove garlic, chopped
  9. 1 1/2 cups parsley leaves
  10. 1/4 cup (60ml) olive oil
  11. 1 tablespoon red wine vinegar
  12. 1-2 tbsp water

The instruction how to make Chicken and picada soup

  1. Heat oil in a large saucepan, cook onion 1-2 minutes or until tender. Add capsicum and potato, cook for 2-3 minutes.
  2. Add chicken and cook until starting to brown. Add the Campbellu2019s Real Soup Base, bring to the boil, reduce heat and cook for 15 minutes.
  3. Serve topped with Picada.
  4. For the Picada: combine all ingredients in a small bowl of food processor or blender and pulse until combined.
