  1. 800g chicken thigh fillets, cut into 3cm pieces
  2. 1 tablespoon extra virgin olive oil
  3. 2 teaspoons coriander seeds, crushed
  4. 1 teaspoon cumin seeds, crushed
  5. 1 teaspoon sesame seeds
  6. 1 teaspoon sweet paprika
  7. 1 garlic clove, crushed
  8. 2 Lebanese cucumbers
  9. 1 garlic clove, crushed
  10. 1 cup plain Greek-style yoghurt
  11. 1/2 cup finely shredded fresh mint leaves, plus extra leaves to serve

  1. Combine chicken, oil, coriander, cumin, sesame seeds, paprika and garlic in a large bowl. Season with salt and pepper. Thread chicken onto skewers.
  2. Make Tzatziki. Coarsely grate cucumbers. Squeeze out excess moisture and place in a bowl. Add garlic, yoghurt and mint. Stir to combine. Season with salt and pepper.
  3. Heat a large frying pan or chargrill pan over medium-high heat. Add the chicken skewers. Cook, turning occasionally, for 6 to 8 minutes or until browned and cooked through.
  4. Serve skewers with tzatzik and extra mint leaves.
