The ingredient of Indian-style chicken curry

  1. 600g chicken thigh fillets, trimmed
  2. 1 1/2 tablespoons vegetable oil
  3. 1 cup Roasted red onion (see related recipe)
  4. 2 garlic cloves, finely chopped
  5. 2cm piece fresh ginger, finely chopped
  6. 2 teaspoons garam masala
  7. 1/2 teaspoon chilli powder
  8. 1 cup Fresh tomato sauce (see related recipe)
  9. 1 1/2 cups Massel chicken style liquid stock
  10. 1 cup Roasted pumpkin (see related recipe)
  11. 2 cups Roasted potato (see related recipe)
  12. 1/4 cup plain yoghurt
  13. 100g baby spinach
  14. 1/2 cup fresh coriander leaves
  15. 4 cups Pea and green onion rice (see related recipe)

The instruction how to make Indian-style chicken curry

  1. Cut each chicken thigh fillet into 6 pieces. Heat 1 tablespoon oil in a large saucepan over medium-high heat. Cook chicken, stirring, for 6 to 8 minutes or until browned all over. Transfer to a bowl.
  2. Heat remaining oil in pan. Add onion, garlic and ginger. Cook, stirring, for 2 minutes or until onion is heated through. Add garam masala and chilli powder. Cook, stirring, for 1 minute or until fragrant.
  3. Return chicken to pan. Add tomato sauce and chicken stock. Bring to the boil. Reduce heat to low. Simmer, covered, for 15 minutes. Add pumpkin and potato. Season with salt and pepper. Simmer, covered, for 15 minutes or until vegetables are heated through. Stir in yoghurt, spinach and half the coriander. Simmer for 5 minutes or until spinach is just wilted.
  4. Meanwhile, place rice in a heatproof, microwave-safe bowl. Cover loosely with plastic wrap. Microwave on medium-high (75%) for 3 to 5 minutes, stirring halfway through cooking, until heated through. Serve curry with rice, sprinkle with remaining coriander.
