  1. 2 tablespoons lime juice
  2. 1 tablespoon fish sauce
  3. 1 tablespoon caster sugar
  4. 1 small red chilli, seeds removed, finely chopped
  5. 1 tablespoon vegetable oil
  6. 300g skinless chicken breast fillet, thinly sliced
  7. 150g snow peas, ends trimmed
  8. 1/2 small red onion, finely sliced
  9. 1/2 cup coriander leaves
  10. 1/2 cup mint leaves
