  1. 20g butter
  2. 1 large brown onion, finely chopped
  3. 2 teaspoons MasterFoods Cumin Seeds Ground
  4. 1 1/2 cups (300g) Riviana Basmati Rice
  5. 2 cups (500ml) chicken stock
  6. 100g baby spinach leaves
  7. 1 tablespoon vegetable oil
  8. 500g Coles RSPCA Approved Australian Chicken Thigh Fillets, cut into 3cm pieces
  9. 450g jar Pataku2019s Butter Chicken Mild simmer sauce
  10. 1/3 cup chopped coriander
  11. Coriander leaves, extra, to serve
  12. Lemon wedges, to serve

  1. Melt butter in a saucepan over medium heat. Cook half the onion, stirring, for 3-4 mins or until soft. Add cumin. Cook, stirring, for 1 min or until aromatic. Add the rice. Cook, stirring, for 1 min. Stir in stock and 1 cup (250ml) water. Bring to the boil. Reduce heat to low. Gently simmer, covered, for 18-20 mins or until liquid is absorbed. Remove from heat. Use a fork to separate the grains. Stir in spinach. Stand, covered, for 5 mins.
  2. Meanwhile, heat oil in a large, deep frying pan over medium-high heat. Cook the remaining onion, stirring, for 5 mins or until soft. Add chicken. Cook, stirring, for 2-3 mins or until lightly browned. Stir in simmer sauce. Bring to the boil. Reduce heat. Simmer, partially covered, stirring occasionally, for 15 mins or until chicken is cooked through. Stir in chopped coriander. the rice. Cook, stirring, for 1 min. Stir in stock and 1 cup (250ml) water. Bring to the boil. Reduce heat to low. Gently simmer, covered, for 18-20 mins or until liquid is absorbed. Remove from heat. Use a fork to separate the grains. Stir in spinach. Stand, covered, for 5 mins.
  3. Divide pilaf and curry among serving plates. Serve with extra coriander and lemon wedges.
