  2. 1 tablespoon Portuguese seasoning
  3. 4 (125g each) chicken thigh fillets, trimmed, halved
  4. 300g pineapple, peeled, cored, diced
  5. 1 medium Lebanese cucumber, diced
  6. 1/2 small red onion, thinly sliced
  7. 1/3 cup fresh coriander leaves
  8. Baby rocket, to serve
  9. Lime wedges, to serve
