This smokey, spicy and citrussy salad makes the perfect lunch or light dinner.

The ingredient of Smoked chicken & wild rice salad

  1. 1 1/2 cups (300g) jasmine and wild rice blend
  2. 1/3 cup (80ml) mirin
  3. 2 tablespoons rice vinegar
  4. 1 tablespoon tamari or soy sauce
  5. 1/4 teaspoon sesame oil
  6. 1 tablespoon lime juice
  7. 1 small red chilli, seeded, fi nely chopped
  8. 1 telegraph cucumber, halved, sliced on the diagonal
  9. 2 (about 380g) smoked chicken breast fillets, finely shredded
  10. 1/4 cup chopped mint, plus extra leaves to garnish
  11. 1/4 cup chopped coriander, plus extra leaves to garnish
  12. 1 small red onion, very thinly sliced
  13. 1/2 cup chopped roasted peanuts
  14. Sweet chilli sauce, to serve
  15. Lettuce leaves (optional), to serve

The instruction how to make Smoked chicken & wild rice salad

  1. Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.
  2. Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
